The Curt Trailer Hitch Receiver part # C11276 which is a fit for a 2010 Toyota Prius should be okay to be used to pull the car out of a ditch. The trailer hitch doesn't have to be rated for the weight of the vehicle since it's a rolling load. It uses the same attachment point as the factory tow hook does so there should be no issue. The Reese Weight Distribution Systems like part # RE44FR will allow you to reverse without having to disengage the spring bars. That said, you need to make sure you are doing so at a relatively straight angle meaning you can't put the trailer at say a 90 degree angle in order to get into a tight space. Unfortunately you cannot wire the battery charger to battery of the Hopkins Engager Push-To-Test Trailer Breakaway Kit with Built-In Battery Charger # 20400 as it will not keep the battery charged. You will need to wire the battery charger to the constant 12v wire coming from the trailer harness.

This is actually an issue with the Mercedes-Benz Sprinter 3500 in the 2017 model year if it was not equipped with the factory tow package. Due to the vehicle's wiring system, as you mentioned, you will need the stop light switch kit # RM-751475 to bypass the factory switch.
